Frozen Pea Salad Recipe a family favorite — one that is sure to be a crowd pleaser on these hot summer days. Frozen Pea Salad is best served well chilled. This dish needs to be chilled in the freezer for at least 30-minutes before the first serving is dished up. Don't leave it in too long!
We had family staying with us while they relocated from Arizona to California. Since I was feeding nine people, instead of my usual three, I decided to make Frozen Pea Salad. The thought of even turning on the oven in this heat, was more than I could tolerate.
We have a one-bite rule in our house. The kids must all try at least one bite of a food they aren't familiar with. So, when I asked them to try the Frozen Pea Salad the five-year-old dutifully took a bite and promptly announced, "This is gross!" I really wasn't surprised in the least.
However, you could have knocked me over with a feather tonight when we had left-overs for dinner and both the five-year-old and the six-year-old helped themselves to a dish of Frozen Pea Salad — with an added touch of her own — honey mustard. The five-year-old — not to be outdone — chose cranberry mustard for his salad, while the 15-year-old decided to try the horseradish mustard — go figure.
Isn't it wonderful when our children make good choices all on their own? Who knows maybe someday they will serve Frozen Pea Salad to their little ones?
Mix together all ingredients, except chow mein noodles in a large mixing bowl, chill in the freezer approximately 30 minutes. Top with a handful of chow mein noodles and serve. Easily serves 6 - 8 generous portions.
This is a simpler variation of the Frozen Pea Salad, that is quick and easy to make and just as yummy.
Combine: lettuce, tuna, mayonnaise, salt and pepper. Fold in frozen peas. Chill mixture in freezer for about 20-minutes (or as long as you can stand to wait). Fill serving bowls, top with a handful of chow mein noodles and serve.
Note: If substituting fresh peas in this recipe, after hulling, be sure to freeze before using.
This dish is not recommended for camp outs or picnics where you will be traveling away from home.
